Quick Meatloaf with Brown Gravy

Meatloaf has always been a family favorite but because it took so long to make, we simply didn't have it often. Now with making it in the brownie pan it takes only 15-18 minutes and they are perfectly portioned (and as my husband says it's perfect sandwich size)!

Ingredients


Meatloaf:

2 lbs ground beef, leaner the better

1 med onion, finely chopped

2 large eggs

3 garlic cloves, minced

1 15oz can petite diced tomatoes, drained

3 Tbsp ketchup

3 Tbsp fresh parsley, finely chopped

3/4 cup Panko breadcrumbs

1/3 cup milk

½ tsp ground paprika

Salt & Pepper, to taste


Brown Gravy:

1/4 cup flour

2 tablespoons butter

2 cups beef broth

1 teaspoon beef bouillon, paste or powder

1 teaspoon Worcestershire sauce

½ teaspoon garlic powder

1 teaspoon onion powder

Salt & pepper to taste


Directions


Preheat oven to 350F


Mix all meatloaf ingredients into a large bowl. I like using the Mix n Chop to do this because it mixes as it breaks apart the mix (and keeps my hands clean)


Use the Extra Large Scoop to fill each well in the Brownie Pan with the meatloaf mixture. Use the back side of scoop to smush it down flat.


Bake 15-18 mins until cooked through.


To make gravy:


Add the butter to a medium sized saucepan and heat over medium heat.


Once the butter melts, add the flour. Whisk until the mixture thickens and forms a roux.


Pour in the beef broth while continuing to whisk.


Add salt and pepper and let it simmer for a few more minutes until it thickens to your preference. 


Add the beef bouillon, Worcestershire sauce, garlic powder, and onion powder. Whisk the ingredients together until combined.


While continuing to whisk, bring the mixture to a low boil then reduce the heat to a simmer.


Allow the gravy to simmer for a few minutes until the mixture thickens.


This makes more than enough for the meatloaf, I usually use it for the mashed potatoes as well.
