Raspberry Balsamic Chicken

I absolutely love Balsamic almost anything, but the sweet tangy taste of Raspberries and super YUM! Served with a very basic Caprese Salad and Steamed Broccoli makes this delicious dinner complete in less than 30 minutes!


Ingredients


Olive Oil

4 Chicken Breasts, boneless skinless

3/4 cup of Seedless Raspberry Preserves

2 Tablespoons of Balsamic Vinegar

Sprigs Rosemary

2 cloves Garlic, minced

Salt & Pepper



Directions

Preheat the oven to 425°F.


Season the chicken with salt and pepper.


Heat the oil in a large ovenproof skillet like the 5 Qt Brilliance Nonstick Sauté Pan over medium-high heat.


Add chicken to skillet and cook, about 4 minutes per side until you have a golden crust.


In small bowl combine Raspberry Preserves, Balsamic Vinegar, and Garlic mix well.


Remove from the heat and stir in the raspberry mixture and add sprigs of Rosemary.


Place skillet in heated over for about 10-15 minutes, flipping and coating your chicken every 5 mins until it reaches an internal temperature of 165F.


Remove from oven and serve (be sure to coat again with the glaze).


*** My Caprese Salad consists of Baby Spinach, Basil, Grape Tomatoes and Fresh Mozzarella Pearls drizzled with a Balsamic Glaze
