My Chicken Parmesan

This is another one of my favorite dishes, I have tweaked it from repeatedly trying different recipes and changing things to fit my tastes and making it my own.

Ingredients

For The Chicken

Olive Oil

2 large Eggs

2 cloves Garlic, minced

4 tablespoons Lightly Dried Italian herbs*, divided

Salt and pepper to taste

3 large chicken breasts halved horizontally to make 6 fillets

2 Tablespoons Garlic Rub

1 cup Panko Crispy Bread Crumbs

1/2 cup fresh grated Parmesan Cheese

Marinara Sauce

(or in a pinch I use Rao's Homemade Tomato Basil)**

6 slices Fresh Mozzarella Cheese or Shredded

1/3 cup Fresh Parmesan Cheese, grated

2 tablespoons fresh chopped Basil


Bonus Spaghetti

Water to cook spaghetti

Spaghetti Noodles

4 Chicken Bouillon Cubes


Note: * I often use Gourmet Garden Lightly Dried Herbs, especially when fresh is not readily available at my grocer*

And the best store bought pasta sauce I have found is Rao's Homemade Tomato and Basil, pricey but worth it, if you don't want to make your own


Directions


I make a mixture using 2 eggs, minced garlic, 2 tbsp italian herbs, salt and pepper in a zip lock bag and add my chicken,, I work my chicken in coating it throughly and squeezing excess air out, let set at least 15 minutes or longer if you can (this can be done the night before)


Preheat oven to 425F


Add olive oil (enough to fry chicken) in a large skillet and heat to Medium High


In one Coating Tray add your Marinated Chicken.


In second tray, add Breadcrumbs, Garlic Rub, Parmesan Cheese and remaining italian herbs, stir to blend.


Use a third tray, to place breaded Chicken.


Prepare a baking dish.... I love using the Stone Bar Pan for this recipe... lightly oil and I use a basting brush to spread a couple Tbsp of my sauce.


Once Oil in pan is hot add, breaded chicken and cook about 3 minutes per side to get a good golden brown crust.


Then add to Stone Bar Pan


Top each breast with Sauce (about 1/3 cup depending on size), slice of Mozzarella cheese, and a good heap of grated Parmesan. Then add some of the chopped basil to top.


Place in heated oven an bake a good 15 minutes or until cheese is melted and chicken is cooked completely through.


I like serving this over spaghetti but not just any spaghetti 😊I only do this with Chicken Parmesan but I love it.


Get my water ready to cook spaghetti but add 4 chicken bouillon cubes, once they are dissolved, cook spaghetti per packaging, drain and then toss with Garlic-Parmesan Olive Oil


Top with Chicken Parmesan and Serve!!!
